Gradually cream butter with sugar, salt and yolks until fluffy. Add lemon zest, vanilla sugar, baking powder and rum. Finally, mix in sifted flour. Let mixture rest, covered, in refrigerator until firm. With food processor, attach meat grinder and use attachment of cookie cutter to pass dough through in various shapes. Place on prepared baking sheet and bake in preheated oven at 165 at 175 °C for 12 to 14 minutes until light brown under supervision. Spread half of the cooled cookies with jam on one side and place the other half on top. Dip in chocolate glaze or decorate with it.Chocolate glaze:Melt chocolate glaze over a water bath or in the microwave over very mild heat. It should only be slightly warm. Dissolve coconut oil or butter in it and stir in.
