Peel and coarsely chop the onion and garlic. Wash and dry the peppers, remove the seeds and stalk and then chop coarsely. Drain the preserved tomatoes well, pat dry and cut in half. Also halve the olives. Remove the skin from the sausage and cut into large cubes. Place onion, garlic, peppers, olives and tomatoes in a bowl and puree very finely with a hand blender. Puree the meat sausage cubes as well. In another bowl, cream the butter and season with Tabasco, pepper and salt. Stir in the bell pepper mixture and the pureed bologna and mix well. Season again with salt and pepper.
