Rollgerstl with Mushrooms

Strain soaked cereal. Melt butter and sauté chopped onions in it. Add cereal and sauté, deglaze with white wine. Let the wine boil away and gradually add the mushroom soup, stirring often. As soon as the grain becomes soft, roast the mushrooms in another pan, add and steam briefly. Stir constantly and finally season with herbs and spices. Finish with some fresh, cold butter and grated hard cheese if desired.
