For the red cabbage, remove the outer leaves from the cabbage, cut out the stalk and finely shave on a cabbage slicer.

Peel and finely chop the onion.

Peel the apple, remove the core and slice the apple.

Heat the lard in a pot and add the sugar. Caramelize the sugar, which means it melts and turns brown.

Add the onion and caramelize it too.

Deglaze with balsamic and add the cabbage and apple slices.

Pour in the vegetable soup, season with salt and pepper and steam over medium heat for about half an hour.

The red cabbage tastes even better warmed up the next day!
