For the potato pan, boil the potatoes in a little salted water until done and peel. Then cut them into cubes. Peel and finely chop the onions and fry them with the potatoes in hot oil, turning them.

Cut the fish into 2 cm pieces, removing all bones. Clean, wash and slice the mushrooms, add them to the potatoes with the fish and fry for a few more minutes.

Beat the eggs and pepper them, then pour them over the potatoes and let them set. Cut the chives into small rolls and sprinkle over the dish before serving.
