Preparation (about 45 min):

Clean the potatoes, make, remove the peel and press through the potato ricer. Then add the yolks, a pinch of salt, a little bit of vanilla sugar and flour and stir to a nice amount (not too soft). Mix powidl with poppy seed baking mix well and coat the sugar cubes with it.

Cut open plums, remove pit and fill with prepared sugar cubes. Form a dumpling from potato mixture, make a bulge, press in the plums and coat well. Then form nice dumplings with moistened hand. Pour into boiling water and let stand for about six to seven minutes.

Heat the butter, add the breadcrumbs, the remaining vanilla sugar and the cinnamon. Drain the dumplings well and arrange on a flat plate: tear open with a fork, sprinkle with butter crumbs and garnish with raspberries, raspberry puree, lemon zest and mint croissants.
