For the pizza dough, put the flour in a bowl and make a well in the center. Add yeast and sugar. Pour about 1/4 lukewarm water into the well and let rise, covered, for 15 minutes.

Add salt and olive oil to the edge on top of the flour (should not come in direct contact with the yeast). Mix all ingredients either with a mixer or with your hands until a smooth dough is formed.

Let the dough rise, covered, in a warm place. It should almost double in size. Knead the dough again on a floured surface, roll out and then top to your heart’s content.
