For the pizza dough, make a well in the center of the flour. Add the crumbled yeast and the water and stir gently.
Knead the dough first with the dough hook of the hand mixer, then with your hands to a smooth yeast dough. Let the dough rise for about 30 minutes with the lid closed.
Add salt and knead again. Add a little more water if necessary to make a smooth dough. Knead the dough with your hands for about 10 minutes.
Divide the dough into thirds, dust with flour and let it rise again in a warm place for about 120 minutes with the lid closed until it has doubled in size.
Then continue to process.
