For the orange-red cabbage, remove the skin from the onion and cut into strips. Sauté them in the goose fat.

Cut the red cabbage into strips, add to the onions and sauté. Grate the peel from the oranges and squeeze out the juice.

Add the zest and juice, as well as all the remaining ingredients, bring to a boil and season. Simmer the red cabbage gently for about 2 hours, stirring a few times.
