Nuremberg Toast with Camenbert

Halve onions lengthwise and cut diagonally into 1/2 cm thick strips. Halve pears, remove core and cut halves into 4 wedges each. Fry in a large frying pan with 2 tbsp hot clarified butter for 2 min on each side. Lift out, season with salt and season with pepper. Saute onions in drippings until translucent, add to pears form. Put roasting pan aside.

Preheat oven broiler to 250 °C (gas 5). Spread bread evenly on a baking sheet, toast lightly on the top rack, remove and cool. Cut the Camenbert into slices. Roast sausages in 1 tbsp hot clarified butter in frying pan until golden brown.

Place 3 sausages and 2 pear slices with onions on 1 slice of bread. Cranberry compote over it form and cover with camenbert.

Grill the bread on the top rack for 3-4 minutes – the cheese should just start to melt.
