Season the cleaned char fillets with salt, lemon juice and freshly ground white pepper. Very lightly flour one side of the fillet. Fry briefly on both sides in an olive oil and butter mixture in a pan.

Serve boiled potatoes with the briefly fried char fillets.

Mountain char has the most tender flesh of all fish – it tastes plain and delicious.
