Remove the crust from the toast, cut into small cubes and sprinkle with a little water. Rinse and clean the zucchini, also cut into small cubes. Peel and finely dice the shallots. Pluck half of the sage leaves and chop finely.
Sauté shallots in butter, add diced zucchini and chopped sage and sauté briefly.
Knead minced meat with steamed shallots-zucchini toast, egg, cubes, mustard and Parmesan cheese. Form 8 steaks from the mixture. Clean, rinse and halve tomatoes.
Heat clarified butter in a frying pan, roast the steaks on both sides in about 4 minutes, remove from the frying pan. Cool slightly, wrap with ham slices, placing a few sage leaves between ham and chopped steak. Fry again for 1 minute on each side. Add tomatoes and fry for 1 minute.
Serve two minced steaks with tomatoes per person.
