Clean, rinse and cut carrots, celery and zucchini into small pieces. Peel and dice onion and sauté in hot fat. Add carrots and celery, sauté for 8-10 min. until soft. Add zucchini and sauté for 3 minutes. Season. Knead together soaked, squeezed eggs, rolls, minced meat, mustard, chopped parsley and crushed garlic. Add the vegetables. Season to taste. Shape into a greased tart pan and bake at 200 degrees for 20-25 minutes. Serve with potato salad.

Tip: Zucchini are a type of pumpkin and therefore low in calories, rich in vitamins and easy to digest – just the thing for a light meal!
