For milk soup, sweat flour in hot butter. Pour in boiling milk and stir until smooth.

Cook very slowly over low heat for 10 minutes. Stir repeatedly. Whisk egg yolk and cream to thicken soup.

Serve the milk soup with white bread or add some oat flakes.
