Bring soup to a boil. Prepare fennel (ready to cook, e.g. peel, remove woody parts and dirt), cut off. Cook in the soup for approx.

15 min. in the soup. Then crush and cool. Perfume with Pernod, season and distribute evenly on plates. Cut raw ham into tender strips, roast until crispy without adding fat, garnish the soup with it and bring to the table on the spot.

Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
