First peel the melon, remove the seeds and cut into small pieces. Wash the apricots, remove the seeds and also cut into small pieces.

Squeeze the lemon and grate the peel.

Place fruit in a large saucepan, puree with a hand blender, add lemon juice and lemon zest, stir in preserving sugar.

Heat fruit mixture, boil for 5 minutes until bubbly, immediately pour into clean jars and seal.
