For the mashed potatoes, peel the potatoes and cut into cubes. Place in a pot and boil until soft, covered with water and salt.

Mash firmly with a potato masher, add butter, pour over hot milk and mix well with a whisk.

Strip tarragon from the stems, chop a little and mix into the puree, season with nutmeg.
