For the lukewarm saddle of hare fillets:

Instructions:

For the lukewarm hare back fillets, clean the hare backs.

Rub with salt, pepper and the crushed juniper berries and sear all over in hot nut oil.

Keep warm.

For the malt beer apples, boil the beer with sugar, cinnamon, lemongrass, cloves and honey.

Peel the apples, cut out the core. Briefly steam the sliced apples in the beer mixture.

For the honey vinaigrette, cut the radishes or popsicles into fine sticks.

Wash the lettuce and spin dry.

Distribute on the plates, put the apples and the radishes on top.

Cut the lukewarm rabbit fillets into slices about 1 cm thin and spread them on the salad.

Mix the apple cider vinegar with salt, pepper, honey and nut oil and whisk well.

Drizzle the vinaigrette over the salad, coarsely chop the walnuts or almonds and sprinkle over the top.
