For the beer shanks, rub the shanks with salt, pepper and garlic pressed through. Sprinkle the finely chopped herbs on top.

Put the shanks in the preheated oven at 200 degrees. Brush with beer from time to time and roast for about 2 hours until crispy.

Degrease the liquid. If necessary, season and thicken the sauce with pieces of ice-cold butter.

Beer knuckles go very well with napkin dumplings and red cabbage.
