Mix salt, bell pepper and paprika powder and rub into beef lung fillet. Cut mushrooms into slices, dice smoked bacon and pickles, cut calf’s liver into strips. Finely chop the parsley and mix everything together. Stuff the fillet with it and tie tightly. Peel and quarter the onion and fry in butter. Put the meat on the onion pieces and let it roast covered at 200°C for about 30 minutes. After 20 minutes, add white wine and turn the meat frequently. Before serving, slice the roast and baste with gravy.
