Andreas Meissner: I always cook by eye (number of people, gluttony, etc.) Therefore, no quantities. Since Labskaus is a dish made from leftovers, there are no limits to your imagination.

Make potatoes and mash them with beet juice and gherkin juice. Cut gherkins and beet into small cubes. Cut anchovy or possibly herring fillet into small cubes and mix into the potato puree. Season to taste with salt and freshly ground pepper.

Since fish is not everyone’s cup of tea, the fish can be replaced with corned beef or canned beef.

If you don’t like red colored mashed potatoes, leave out the beet juice.

Unfortunately, the fried egg can not be replaced.
