For the cream soup with chanterelles peel and dice the potatoes, clean the chanterelles well and cut them into small pieces.

Put the water on to boil, add salt and caraway seeds, then add the potatoes and chanterelles and simmer until the potatoes are soft.

Then carefully stir in the sour cream and let the soup simmer for another 10 minutes. Season to taste with salt, pepper and nutmeg and sprinkle with chopped chives before serving.
