Cut fresh goat cheese into 1 cm thick slices.
Cut out core of 2 apples, cut apples diagonally into 1 cm thick slices. Sprinkle with 2 tbsp juice of one lemon. Toast 6 slices of wheat toast bread and cut out round (7 cm ø). Grease a shallow gratin dish with butter. Fill the bread slices one after the other. Place 1 slice of apple and 1 slice of cheese on each slice. Sprinkle with pepper, 1 tsp. brown sugar and the chopped leaves of 6 thyme stems. Place 1 tsp butter in flakes on top. Bake in heated oven at 225 °C (gas 4, convection oven 200 °C ) for 15 min until golden brown. Garnish with frisée lettuce.
