Instructions:

For the gluten-free apple pie, beat the eggs and butter until thick and creamy, add vanilla sugar and sugar.

Mix baking powder and cornstarch and add little by little. Pour the mixture into a cake springform pan (26 cm diameter) lined with baking paper on the bottom only.

Pre-bake in a heated oven at 175 degrees (gas: level 2/circulating air 150 degrees) for 15 minutes.

Dissolve the butter for the icing and let it cool down a little bit. Separate the eggs. Whip egg whites until very stiff. Mix egg yolks, apricot jam, sugar and the butter and stir in the egg whites.

Wash apples, peel, quarter, stone and cut into wedges. Place the apple slices on the pre-baked pastry, spread the glaze on top and bake at 175 °C (gas: level 2/circulating air 150 °C) for about 50 minutes.

Remove the gluten-free apple cake from the pan and allow to cool.
