For the asparagus soup, peel the asparagus, wash and cut into 2-3 cm long pieces. Cook covered with water, strain.

Fill up the asparagus broth with chicken soup to 1 liter of liquid. Sweat flour in butter until light yellow, pour on and cook well.

Mix egg yolk with cream, add to soup, season to taste and add asparagus pieces.

Serve the asparagus soup in warmed plates.
