For the eggplant towers, preheat the oven to 200°. Wash the eggplant and cut into thick slices, then immediately salt and pepper them.

Brush a baking dish with oil and place the slices in it. Successively layer tomatoes, oregano, cottage cheese, horseradish and gorgonzola. Bake the eggplant towers for about a quarter of an hour.
