For the Double Toffifee Muffins, beat the eggs and whisk the egg whites until frothy. Mix all the other ingredients together and then fold in the egg whites.
Fill the muffin cups halfway, place a Toffifee in each cup, and then top with the remaining batter.
Bake at top and bottom heat for about 35-40 minutes. When the muffins are done, place an additional Toffifee on top of each Double Toffifee muffin.
