For the mango cream with cashews, peel the mango and remove the stone. Puree the flesh, except for 4 wedges, with the coconut milk, squeezed orange, cashews and finely chopped ginger in a stand mixer.

Pour into 4 dessert bowls, garnish with the mango wedges left behind (cut out) and serve the mango cream with cashews.
