Instructions:

For the confetti salad, drain mini hominy and silver onion, keeping onion juices. Wash bell bell pepper and cucumber, peel onion.

Dice mini-kukuruz, bell bell pepper, cucumber and onion. Rinse, dry and finely chop chives.

For the dressing, stir together mustard, vinegar, oil and a bit of onion stock. Season to taste with salt and pepper.

Toss the bell bell pepper, silver onion, mini hominy, chives, onions, cucumber and cheese with the dressing. Chill the confetti salad for about an hour.
