For the coffee-chocolate muffins, grease the muffin tin. Dissolve coffee powder in 5 tablespoons of hot water – let cool.

Cream eggs with sugar, vanilla sugar and butter, add coffee. Sift flour and baking powder, mix with lemon zest, cocoa and chocolate shavings.

Carefully stir into the egg mixture. Fill the muffin cups 2/3 full and bake the coffee-chocolate muffins at 180 degrees for about 20 minutes.
