Instructions:

Blanch the Brussels sprouts, pluck off the leaves. Mix the ingredients for the salad dressing and season.

Soak the Brussels sprouts in the dressing for a few minutes. Then add mushrooms, tomatoes, olives and walnuts and place eggs on top. Garnish with garlic croutons and chervil.
