For the artichoke salad with Parma ham, quarter the artichoke hearts and put them in a bowl. Cut the fresh tomatoes into wedges and the dried tomatoes into strips. Add both to the artichoke hearts.
Cut the Parma ham into thin strips and add to the artichokes along with the halved olives. Chop the basil leaves and add them to the bowl as well.
For the dressing, put the oil, vinegar, garlic, mustard and honey in a screw-top jar. Season with salt and pepper, seal well and then shake well. Pour the dressing over the salad and mix everything well.
