Peel and rinse the potatoes and cut into small cubes. Peel the onion and dice it as well. Sauté in hot fat, add potato cubes.

Drain salsify, collect vegetable water. Add 2/3 of the salsify, clear soup and salsify water to the potatoes form. Bring to a boil and simmer for 10 minutes. Add whipped cream, mash, boil once, season.

Add peas, remaining salsify and juice of one lemon. Mix in salmon slices. Sprinkle chervil leaves on top.
