Season the zucchini and potatoes with salt and season with pepper. Leave to stand for half an hour. Mix all ingredients into a dough and form small potato pancakes.

Roll in flour on both sides and fry in hot olive oil.

Serve the potato pancakes with fresh tzatziki or leaf salad.

Our tip: As an alternative to fresh herbs, you can also use frozen ones – these also stand out for their fresh taste!
