For the avocado omelet, halve and pit the avocado. Using a tablespoon, scoop out the flesh and cut into thin slices.
Then heat some oil in a small frying pan. When it is warm enough, put the avocado slice in and fry for about 4 minutes. Meanwhile, whisk the three eggs in a cup and pour over the avocado slices.
Let the eggs fry until they are cooked on the bottom side. Then flip the omelet over. Fry for another 2-3 minutes. Place the finished avocado omelet on a plate and serve sprinkled with chives.
