Cut the roast beef into eight evenly sized cutlets and carefully plate between two sheets of cling film with a tiny bit of olive oil. Remove the top cling film and season the meat (lying on the film). Top with the Parma ham. Remove any excessively long stems from the washed arugula and place small mounds on top of the prosciutto. Cut the mozzarella into sticks and place one stick each on top of the prosciutto with the arugula. Now roll up the meat and attach it with a skewer. Sauté in olive oil on all sides and season. Put the rolls for 3 min. in the 200 °C hot stove.
This dish goes very well with a little bit of pasta and tomato olive sauce.
