For the char on wild garlic sauce, first prepare the wild garlic sauce. Wash and dry the wild garlic and remove the coarse ends. Blend with olive oil and pine nuts in a blender to make a firm pesto.
Put the pesto in a sauté pan, heat with whipping cream, white wine and butter, season lightly with salt and pepper and a little sugar.
Salt and pepper the char and sauté in a mixture of butter and olive oil over medium heat for 2 minutes on each side.
Arrange the char on wild garlic sauce and serve.
