For the apple pie covered, quickly mix the flour with butter, sugar, egg yolks and the sour cream to make a crumbly dough. Let rest in a cool place for 1/2 hour, then divide the dough in half. Roll out the 1 part of the dough to 2cm thickness and place on a kitchen tray. Peel and finely slice the apples.Mix with 1 tsp cinnamon, 4 tbsp sugar and raisins, spread on the dough sheet and smooth. Roll out the remaining dough and spread it over the apples.
Whisk the egg yolks with a dash of milk. Brush the dough with it and, if desired, sprinkle the apple pie covered with slivered almonds. Bake the apple pie in the oven at 180°C for 45 minutes.
