For the apple pancakes, prepare a smooth pancake batter from the wheat flour, baking powder, eggs, salt and mineral water. Then let it stand for a while.
In the meantime, peel the apples, cut them into quarters and remove the core. Then cut into fine slices. Fold the apple slices into the pancake batter.
Heat clarified butter in a frying pan and, using a small ladle, pour the batter into the pan in batches. Fry the pancakes on both sides until golden brown.
Put the pancakes on plates and sprinkle with sugar and cinnamon.
