For the apple cinnamon cupcakes, preheat the oven to 170 °C (convection oven 150 °C). Prepare muffin tray with paper cups.
Using a mixer, cream butter and sugar in a bowl, add eggs. Mix flour with cinnamon and add to the butter-sugar mixture.
Peel and core the apples and cut them into small cubes. Fold into the dough mixture and then fill it into the paper cups.
Bake for 25 minutes at 170 °C on the middle rack. Leave to cool on a cooling rack.
For the topping, mix cream cheese with butter until creamy, also stir in sifted powdered sugar.
Divide the mixture equally between 2 mixing bowls. Add 1/2 tsp cinnamon to one mixture, add vanilla flavoring to the second mixture.
Fill a piping bag half full with the toppings and decorate the cooled muffins with them. Top with fine apple slices and the apple-cinnamon cupcakes are ready.
