Whip the egg whites until stiff.

Finely grate the chocolate. Mix with cinnamon, sugar, vanilla sugar and hazelnuts. Add to the snow form and knead into a firm dough. Wrap in plastic wrap and refrigerate for at least 120 minutes.

Cover a baking tray with parchment paper and lightly butter it. Roll out the dough on the surface sprinkled with a little sugar to a thickness of about 5 mm. Cut out round cookies of about four cm in diameter and place them on the prepared baking tray.

Bake the chocolate-nut cookies in the oven heated to 200 °C on the second rack from the bottom for fifteen minutes. Cool on a cooling rack.

Melt the chocolate glaze according to the instructions on the bag. Dip half of the chocolate walnut thalers in it. Dry on a parchment paper.
