Salmon Rolls on Carrot Shavings

Instructions:

Place the salmon slices next to each other. Mix mustard, honey, chopped dill and pepper. Brush the salmon slices with it.

Rinse the lettuce leaves, cut out the thick ribs and cut in half lengthwise along the midrib. Place lettuce leaves on top of salmon slices and roll each up.

Chop yellow beet into shavings with a peeler and place on a platter. Drizzle carrot chips with 1/2 tsp. juice of a lemon and oil. Place the salmon rolls on top. Spread horseradish on top and drizzle with juice of one lemon.

Tip: Lemons add a fresh touch to dishes. Consciously choose ripe, rich yellow lemons!
