Instructions:

Steam onion and garlic in butter until translucent. Continue to steam with the tripe for 5 minutes. Extinguish with must, add gravy, season and simmer gently for about half an hour. 5 minutes before serving, add caraway seeds and juice of a lemon and garnish with apple quarters. Note: Serve with potatoes cooked in beef broth.
