Cut vegetables. Sauté young onion, mushrooms and garlic until translucent, add sambal oelek, soy sauce and Chinese cabbage, also sauté until translucent, pour water, add soup vegetables, chili pepper and spices. Simmer for 1.5 – 2 hours. About 15 minutes before serving, let ramen noodles steep in soup. Remove chili pepper. Remove soup vegetables and cut into bite-sized pieces. Season soup to taste. Salt and pepper meat, sear and season with a dash of soy sauce. Serve meat in bowls together with soup.
