For the chanterelle toast, clean the spring onions and chanterelles. Cut chanterelle in half according to size. Wash spring onions, dry and portion into fine rings. Peel fresh ginger and chop finely. Cut ham into small cubes.
Heat butter, brown ham briefly. Add young onion, chanterelle, ginger, season with salt, thyme and pepper.
Fry the toast slices in a little butter until hot.
Crack the egg, whisk and fold into the mixture, just let it poke briefly. Drizzle with a little juice of a lemon, arrange on the toast and cover with the other slice of toast.
Serve the chanterelle toast immediately.
