First, wash the chicken.
Peel the carrot, celery and cut the leek into coarse pieces. Peel the onion and lard with cloves.
Boil the chicken together with the vegetables and onion in salted water.
Cook until the meat is tender. Remove the cooked chicken and the vegetables from the soup and let it cool down a bit.
After cooling, remove the skin and bones from the meat and cut into small pieces.
Season the soup with salt, pepper and freshly grated nutmeg. Cook the soup noodles briefly in it until soft.
Add the pieces of meat and sliced carrots, if desired.
Before serving, sprinkle with freshly chopped parsley.
