Squab actually means unfeathered pigeon, but in Cornwall and Devon in the 18th century this word took on another meaning, lamb or mutton.

Preheat the oven to 220 degrees (gas mark 7). Form the lamb, apples, currants and onions in layers in a gratin dish, sprinkle with sugar, salt and pepper and add just enough water to moisten everything together.

Roll out the dough and cover the gratin dish with it. Brush with the egg yolk and water mixture.

Bake for 15 minutes, then turn the oven temperature down to 180 °C (gas mark 4) and bake for another 1 3/4 hours. Serve hot.
