Remove the skin from the kohlrabi, cut into sticks and cook in boiling hot salted water until al dente. Heat the butter, add the flour and sauté. Add one eighth of a liter of kohlrabi water and cream. Bring to a boil, fold in cheese and season well. Shape the kohlrabi into the sauce and sprinkle with chopped parsley.
