For the yogurt pancakes, mix well the water, salt, baking soda, eggs and yogurt.
Gradually stir in enough flour to make a smooth medium dough. Leave to swell for about 10 minutes. The dough should still flow well, but not be too thin.
Put some oil in a pan and bake pancakes. Carefully spread a slice of Castello blue about 1 cm thick on each of them and roll them up.
If the cheese cannot be spread, simply chop it into small pieces, sprinkle it on the yogurt pancakes and roll them up.
