For the bananas with caramel sauce and vanilla ice cream, first prepare the caramel sauce.
For the caramel sauce, lightly caramelize the sugar in a saucepan. Add the butter, let it foam up and pour in the whipped cream. Reduce the sauce slightly.
Peel the bananas and cut them in half lengthwise. Caramelize some sugar in a pan and brown the bananas in it. Add 1 tablespoon of butter and stir briefly. Deglaze with rum to taste and flambé.
Roast the peanuts in a pan without adding fat until golden brown. Place the bananas on a plate, drizzle with the caramel sauce and sprinkle with the peanuts.
Top each with a scoop of vanilla ice cream and serve the bananas with caramel sauce immediately.
